St. Patrick's Day Green Spinach Pancakes
Instructions
  1. In a blender or food processor, combine egg, oil, buttermilk, and spinach. Blend until smooth. Whisk together the dry ingredients. Add wet and dry ingredients together and stir just until combined. Add vanilla. Cook on a greased griddle over medium heat (about 300 degrees). Cook about 2 minutes, flip, and enjoy!
