Slice baguette on an angle and place on a baking sheet. Coat bread with a light layer of cooking spray or olive oil. Bake at 350 degrees for 7-10 minutes to lightly toast. Combine tomatoes, cheese, basil, olive oil, salt, and pepper. Add 1-2 Tablespoons of the cooled balsamic reduction. Chill 5-10 minutes prior to serving over toasted bread. Top with a sprinkle of salt and enjoy!
